I recently read a series of books that were SPECTACULAR, so I thought I would share them so that you could read them too if you choose. They are written by Liz Curtis Higgs and are a series of 3 books titiled the "Lowland of Scotland" series. The first book is titled Thorn in My Heart, the second is titled Fair Is the Rose, and the third is Whence Came a Prince. The books are an adaptation of the Biblical stories of Jacob and Esau, as well as Rachael and Leah. It was wonderful to beacle to have these stories I have heard many times in Sunday School come to life for me a such a fresh and impactful way. I rejoiced, cried, anguished with, and felt anger on behalf of the characters in the book that I was truly sad when our journey together ended at the end of the series. Higgs did such a wonderful job writing the novels that it increased my faith and challenged me to grow as a follower of Christ. I love it when a novel does that! There is an extension novel titled Grace in Thine Eyes that is wonderful as well since you get to spend a little more time with the characters you have come to love. I hope you get a chance some day to read these books, they really are wonderful.

A great recipe...
Here is one of the great recipies that I have come across as I have been looking for new ways to cook foods so that I can eat them. I found this one on www.recipezaar.com. It is for Parmesan Crusted Chicken using Hellman's Mayonaise. I changed it a bit in how I prepared the chicken before I cooked it, as well as changed the mayo that I used, but here it is. It is very yummy and nice and moist, here is the version I did:
Serves 4
1/2 cup fat-free mayo
1/4 cup grated parmesan cheese
4 boneless and skinless chicken breasts, thawed
cornflakes mixed with italien seasoning (just enough to be able to coat the chicken)
1/4 tsp.Onion salt
1/4 tsp.Garlic salt
1. Preheat the oven to 425 degrees and coat a baking dish with cooking spray, set aside.
2. Mix the cornflakes, onion salt, and garlic salt on a plate and set aside.
3. Mix the mayo and the parmesan cheese in a bowl or plate.
4. Coat the chicken in the mayo mix and then coat in the cornflake mixture, place into baking dish.
5. Place baking dish with chicken in the oven for 20 minutes, or until the chicken is golden and cooked through.
6. Let rest for 5 minutes, then serve hot.

This is my introduction to the blogging world; I am not quite sure what to do, but I guess I will figure it all out. If I make any blog world mistakes please let me know so that I can avoid them in the future. :)
I decided to create a blog to be able to keep a record of sorts of what the Lord has been teaching me. I also decided that since I always have my face in a book and love sharing the wonderful books I have read I would use this as a place to post my recommendations. I recently had to have my gallbladder removed which has forced me to lean how to cook and as a result I am always looking for great new low-fat recipes, so I thought I would also use this a place to post the yummy foods I have found.
